Holes in spinach beet and chard

Here at Sheffield Organic Growers we've been pondering ways of reducing damage to leaves and increasing marketable yield. Some of the holes are little slugs in the centre of the plants, and some appears to be those little bright green caterpilars that get browner and uglier as they grow, but often it's hard to spot a culprit. Has anyone developed a strategy?
